Getting festive with ginger mocktails today! My birthday is this Sunday so I wanted to share a fun drink recipe I’m loving. Perfect for the ginger lover in your life. Sweetened with a refined sugar-free simple syrup using Vitacost’s coconut sugar! You can add more or less ginger to taste. If you want to use white sugar reduce the amount to be 1:1 with the water.

I recommend making the simple syrup a day before to let it intensify overnight. If you leave the ginger pieces in with the syrup instead of straining them it will yield a spicer syrup. So keep that in mind for prolonged storage.

This is a great option for a party or brunch. It’s really refreshing and pairs amazingly with pretty much anything. Plus you get the added benefit of soothing ginger so it’s light on your stomach. Be sure to adjust the syrup to taste and add extra lime juice for a citrus kick!

Instructions

  1. In a small pot over medium heat, add everything and bring to a boil. About 4 minutes.
  2. Let boil for another 4-5 minutes. Whisking occasionally until reduced by half.
  3. Turn off the heat and walk away. Let cool to room temperature to thicken.
  4. Once cooled, remove the ginger pieces or keep to continue infusing. Transfer to an air-tight container to store in the fridge for up to one month.

Will keep in the fridge for up to one month.

Ingredients

  • ⅔ cups Fresh Lime Juice
  • 4 tbsp Ginger Coconut Simple Syrup
  • 2 tsp Ginger, finely grated
  • 2 cups Sparkling Water
  • Fresh Lime, to garnish
  • Ice, to serve

Rimmed with:

  • Lime Juice

Dipped in:

Instructions

  1. Dip each glass into lime juice and rim with coconut sugar mixture.

  2. Fill each glass with 4-5 ice cubes.

  3. Add simple syrup, followed by lime juice, grated ginger and topped off with sparkling water.

  4. Garnish with a lime wedge and serve immediately.

  5. Stir before drinking, adjust simple syrup to taste.
